Winter Sun Cocktail

Ingredients:
- Juice of 2 clementines (about ¼ cup)
– Juice of ½ small lemon ( ½ oz)
– ½ oz white rum
– spring of rosemary
– lemon zest
– sugar

Recipe:
Moisten the rim of your glass with some fruit juice. (The juice helps the sugar to adhere better than water does.) Combine zest and sugar in a shallow bowl or plate. Turn the glass over onto plate and coat with sugar. Pour juices, triple sec, and vodka into a shaker. Shake and then pour over ice. Garnish with rosemary sprig. (Makes 1.)

Spiced Winter Wine Sangria

Ingredients:
- 2/3 cup sugar
– 2/3 cup water
– 2 cinnamon sticks
– 3 star anise
– 3 cardamom pods, lightly crushed
– 1 (750ml) bottle pinot grigio
– 2 tangerines, thinly sliced
– 2 tablespoons light brown sugar
– 1 cup pomegranate seeds
– optional garnish:
– cinnamon sticks
– star anise


Recipe:
Place sugar, water, cinnamon sticks, star anise and cardamom pods into a small saucepan, stir and simmer until the sugar has dissolved. Remove from heat and allow the mixture to cool to room temperature. While the spice simple syrup cools, spread tangerine slices onto a baking sheet and sprinkle the tops with a small amount of brown sugar. Using a brulee torch, caramel the tops of each orange tangerine slice or place the baking sheet under a broiler for 2 to 3 minutes. Place the orange slices and pomegranate seeds into a large pitcher. Pour the wine over the fruit and add extra cinnamon sticks and star anise, if desired. Strain the simple syrup into the pitcher and stir until well combined. Place the sangria in the refrigerator and allow to chill for at least an hour. Pour into glasses and serve.

Hot Toddy:

Ingredients:
- 4 slices of red apple
– 3 cinnamon sticks
– 3 slices of orange
-2 cloves
– 16 oz simple syrup (equal part sugar dissolved in water)
– 16 oz bourbon whiskey

Recipe:
Add all ingredients to a large saucepan and put over low heat. Slowly bring up to a simmer to infuse the bourbon, and keep over low heat for 5-7 minutes until the fragrance of the mixture becomes more apparent. Serve warm.

Pear Rosemary Cocktail

Ingredients:
- 1 cup of sugar
– 1 cup of water
– 3 springs of rosemary


Recipe:
Fill half of a pitcher with ice. Next pour the 1 ½ cup of pear nectar such as Kern’s in. Then add 1 cup of vodka. Add ½ cup of the rosemary simple syrup. Then mix well and serve with a spring of rosemary.

Virgin Rasberry Bellini

Ingredients:

- 6 oz fresh grape juice (green and red mixed)
- 2 oz raspberry puree
- 1 to 2 oz soda water
- Frozen grapes for garnish

Recipe:
Add washed green and red seedless grapes to a blender, puree, and pass through a sieve. Reserve 6 oz fresh grape juice. Follow procedure with raspberries to obtain 2 oz raspberry puree, which should be poured into a champagne flute. Top puree with the 6oz grape juice, 1 to 2 oz soda water and a few frozen grapes (in lieu of ice cubes) for a flavorful chill.

Virgin Grapefruit Mojito:

Ingredients:
- ¼ ruby or pink grapefruit, cut into small chunks and seeds removed
– 2 tbs. agave syrup
– 12 fresh mint leaves, roughly torn
– ½ cup pink grapefruit soda or flavored mineral water, plus more needed mint sprigs, for garnish

Recipe:
Put the grapefruit pieces, agave and mint in a cocktail shaker. Using a muddler, smash the fruit until the juice is released. Add one cup small ice cubes to the shaker with the half cup soda; attach the lid and shake furiously until combined. Divide between two rocks glasses, add more ice if desired, and top off with additional soda. Stir, garnish with mint sprigs and serve.
